So let me ask as I'm - as is typical - confused: the over-thought, over-fetishized, over-ingrediented "authentic" food (some of which is quite good) that is the rage in all these exposed-brick-and-beam places with Hipsters and their newer/subtler variations all over the place (eating, serving, being "chef") is considered "bland and boring" by the foodies? If so, what food do they like?

Probably stale bread and tap water. Not only because you can "taste the local freshness" in the tap water, but it's also terribly ironic. Which is their bag, baby.

There's sadly truth to this in that I've seen how some take joy in being ahead of the curve in a smug way. But whatever, somebody has to push the envelope for new things to happen and people will always be experimenting with new food combos and techniques.

They are even worse about music. It's a contest to see who can name the most obscure garage band out there.

It is just possible that I am peanut butter's biggest fan in the world - and have made several odd combination sandwiches with peanut butter over many, many years - but that does not sound good in any way and I'm not even going to touch the glass of vinegar.

A few months ago my wife attended a meeting in one of the numerous high-rise buildings in downtown Los Angeles, and for reasons unimportant-to-this-conversation I acted as her driver. During her meeting I waited in the courtyard adjacent to the building, and had the opportunity to observe a number of people who performed some function somewhere within that monstrosity. The "older" guys (say, 40-ish and over) wore the more traditional slacks, button up shirts, and ties (some with suit jackets or sports coats, others without), but the majority of the younger men were almost exclusively dressed as you describe, and at least half of them appeared to have spent more time on their hair that morning than their female co-workers. Since I'm in my mid-50s, have been out of the "work force" for a little over a decade, and have never held a job in that type of "business office" environment, this impromptu fashion show was something of an eye-opener for me.

And no doubt, some of the foodies affect to be delicate flowers with regard to anything but pristine, pasture-raised, non-GMO, artisan-crafted ingredients. Having life-long food intolerances and a sensitive stomach, I understand the appeal of variety when you're limited in what you can eat. But I can't imagine wanting to knock back straight vinegar and bizarre concoctions involving oily fish. Everyone I know with food intolerances would like nothing better than to be able to eat normal food.

To be honest, I've had pasture-raised beef and I've had plain old styrofoam-tray beef, and I honestly can't tell the difference. I'm sure the steer can, but from a gastronomic point of view they seem to me and my prole palate to be indistinguishable. Is this like wine, and I'm supposed to be able to pick out top notes of clover and alfalfa over a supple meadow-fescue finish?
