If, in England, one does not tip in bars (pubs?), how does the bartender know whom to serve first, and how does the barmaid know which drunken jerks to be nice to?

In a busy bar a good bartender spots the general 'order of service'. The law of the jungle kicks in at busy times. Generally, if you're a local you're most likely to get served first.

A good barmaid is never nice to drunks. On the other hand, it doesn't hurt to be hot.* ;)

* No personal experience of this. I've noticed it happen, though.

Reminds me of the time I recommended my regular masseuse to a friend after a hard day on the slopes. When I asked how he liked her he said,"She was OK, I guess." Upon further inquiry he revealed that he was disappointed not to have received a 'happy ending'. :eusa_doh: She's with the US Ski team.

I was accidentally very rude in Japanese restaurant (staffed by Japanese people) on Wednesday in regards to tipping. The service and food had been exceptional, so I gave £25 rather than the £19.48 the meal had cost. The waitress promptly came back with exact change for the £5.52 I had overpaid which I found strange, so I decided to leave £2 on the table when I left.

Just after I had walked to the end of the street I suddenly remembered that it's considered rude to tip in Japan :eusa_doh:

I love tipping with $2 bills at the places I frequent. You don't see too many dueces nowadays, so when you give a bartender or a barista a 2 dollar bill, they get a kick out of it and tend to remember you (and are usually eager to serve you again next time you go in). I've had bartenders snub people next in line to get my drinks first. Maybe it has nothing to do with using two dollar bills, but it's fun.

Easy done. AS far as I can establish, it was traditionally the same in China, though with US tourism has come American tipping culture, so it is much more common (and expected) now. I especially make a point of tipping the concierge when I arrive in a hotel in Beijing - they're the go to guys for booking all sorts of trips and excursions. Keep 'em onside and they can often get you a better taxi rate too..
