Not sure if this belongs here or has been done, but I did a search and found nothing, so I apologise if this already exists. I thought we could use a great recipe thread to share old family favourites, recipes we found in books or tried and tested ones.

Tonight I made a brownie recipe I found in a novel called "The Future Homemakers of America" by Laurie Graham, and they turned out beautifully!

Betty's Best-Ever Brownies

2 sticks butter
4 eggs
4 ounces powdered chocolate
2 cups sugar
1/2 cup sifted flour
1 teaspoon vanilla extract

Heat the oven to 350 deg C. Grease and flour a large baking tray.
Melt butter over a low flame, stir in chocolate and vanilla and set aside to cool.
Beat eggs and sugar until pale and creamy. Fold in the chocolate mixture and blend carefully. Gently add the flour, pour into pan and bake until just set (20-30 minutes).
Leave in pan until cool. Cut into squares for serving.

Hey everyone,
I'm always looking for great new recipes, so figured I'd start this thread. I did a search and couldn't find a current thread of this topic. If there already is one, and I missed it let me know.

Admin, if there is a more suitable place for this thread please advise/move.

I've been making some recipes from this site.

I absolutely love the Lemon Baked Chicken and Chicken Parmesan recipes on there. Hmmmm!

I like simple, tasty and hearty recipes. I also swear by the recipes in this book, but alter the ingredients to my liking.

The meatloaf recipe with blue cheese/butter sauce is to die for (I'm making it tonight actually). Also the sloppy joe recipe is excellent!

Me too, some that have made me famous. Well, at least at work, and some friends & family.:eek:

As HepKitty says, make some requests,,, maybe define parameters- For what, for who, for how...;)

How about a chocolate cake made with either spelt or kamut flour? I don't consume white flour, so am always looking for recipes with other grain flours.

I don't have any that specifically call for spelt or kamut but I would try a basic one and just use the flour of your choice. I wouldn't add all the flour at once, maybe 1/2 c less, and add more if it needs it. I've only played with kamut once, years ago at the bakery, one of the bakers and I tried a yeast bread w/all kamut and it fell apart.

Thank you HepKitty! That's always what I have heard - cakes simply do not stick together/fluff up with any flour besides white flour. However, I shall attempt it. Oh my...clicked on that...chocolate espresso spelt cake!!! Sounds amazing.

you're welcome :)

we tried a yeast bread with kamut flour and it didn't hold up. yeast breads require a higher protein content to stretch properly. baking powder/soda as leavening are fine w/ low protein content because cake & muffin batters don't suffer the abuse of kneading. fortunately spelt will work fine either way. kamut is probably ok for a yeast dough when mixed with bread flour. will probably be ok as a cake or muffins or even cookies though

one more thing, wheat protein is called gluten. you've heard the term, but it's what causes yeast doughs to stretch and isn't always tolerated by people. spelt has gluten/protein as well, not sure of the percentage but I think it's close to hard red wheat (16%). it's a different type of protein than wheat but in terms of baking it acts the same. spelt will stretch fine for yeast doughs and as long as chemical leavened batters aren't overstirred, it will be fine for that too

When I make muffins, bread, pie or pizza crusts, I don’t use yeast with the spelt or kamut flour. I simply soak the flour for 24 hours in kefir, then add my ingredients and bake.

HepKitty, are you a Chef? You certainly are very knowledgeable!

I’m currently searching for a good Earl Grey Tea Cake, as I’ve never had it and it sounds amazing!

there are strains of wild yeast in all flours, which will develop when you make your sponges (yeast + liquid left to fester). kefir contains yeast as well http://www.kefir.net/ unless you use bleached flour, bleaching kills the yeast. I don't like bleached flour anyway it looks phony and gross but that's just me.

I used to work as a baker at a health food store, mostly bread but we also made muffins, scones, sweet & lunch rolls, etc. started baking cookies at age 11 moved on to mix cakes then stuff from scratch... went to cooking school for one semester and decided I shouldn't have to teach stuff that the teacher can't teach (cake decorating, bread besides boring white) and told them to get stuffed. pro I'm not even close, but I do like to feed people

I have an earl gray tea cake recipe printed out but it's not saved to the pc. I'll find it for you and post it when I can, leaving town tomorrow for the weekend so it may not be until next week. google is a good thing when looking for recipes too

Hi there, that certainly explains your expertise!

Oh no, no bleached flour for me. Yuck!

I didn’t realize Kefir had some yeast in it, interesting. Will have a look at that website later.

No worries on the early gray cake recipe, I’ve saved a few now off the net. Just need to get baking!

My favorite eggplant parmesan:

Breadcrumbing/frying the eggplant, covering with tomato sauce, and then OVERCOOKING the hell out of it in the oven. Add cheese. Bake for ten more minutes. Heaven.

And for nostalgia's sake:

Put canned chili in a pot (Cattle Drive works best). Add mustard, hot sauce and sliced hot dogs while heating. Lunch.

maybe the threads could be merged? I admit I missed Drappa's post. I have to try her brownie recipe, sometimes the simplest ones are the best
