How about "Out of Africa", "A Passage to India", or the miniseries "Flame Trees of Thika"?
As for sci-fi with period costumes, you can not do better than the series "Firefly" or the movie based on the series "Serenity". The writing, character development and acting are also of a very high order.

Lassiter(1984) comes to mind. Another with Tom Selleck. I believe that one is in the 1930's. I wish that it and High Road to China would be released on DVD soon.
I've recently enjoyed Flyboys and can't wait to check out The Red Baron. Then there is the Foreign film North Face.

I like to slip in the Shadow with Alec Baldwin and the OK Billy Zane Phantom movie is a half a step above made for TV but has a little panache now and then.

The movie "Sorcerer" is one of my favorite adventure movies. Directed by William Friedkin, starring Roy Schieder whose broken and cracked face is perfect for the role. He plays an armed robber on the lam from the NY mob. Scheider's character finds himself broke and stuck in a back woods of Venezula. Desperate to get out of there and home, he takes on the job of hauling a truck load of unstable dynamite over a mountain and down the other side to deliver the load to an oil drilling encampment that has an oil well fire. He is joined by 3 other nefarious characters also on the lam for criminal indiscretions. I would put it in the period of the very early 1970's based on the cars driven in the opening part of the film or possibly the late 1960's.

People have already mentioned King Kong (1933) and The Most Dangerous Game (1932) which were both produced and directed by Merian C. Cooper and Ernest B. Schoedsack. If you want to see some REAL adventure movies, check out their earlier silent work Grass (1925) and Chang (1927). In both movies, Cooper and Schoedsack took movie cameras into remote, inhospitable regions (Persia and Siam respectively), filmed the native people and wildlife, and then cut the footage into a fictional storyline to make "true to life" adventures. An interesting "docudrama" approach to film making that was soon abandoned due to difficulty and expense. However, if you are interested in real adventure footage from the 1920's these two moves must be seen.
