Beer and Cheese pairing

Most of us are probably familiar with various wine and cheese pairings, but I would like to start a discussion of beer and cheese pairings.

My son is a fan drinking a saison with chevre.

I had some fontinella with a scottish-style ale last night that I thought was a good match.
(though the ale did not go well with a sharp cheddar I also had out - I think a hoppier beer would have been better)

What are your favourite beet and cheese pairings?

English cheddar with any full bodied ale, Guiness (stout generally) or a porter. We finally have a proper cheese monger in town now, it's great to experiment!

I read this thread as "Bear and Cheese pairing" which I thought would be fascinating.

As it is, I have no experience with pairing beer and cheese, but I always love learning more about flavors.

I'll have to try the English cheddar with a Scottish-style beer. I'm sure it would work better than the sharp cheddar.

English Stilton cheese and barley wine. Actually, I think barley wine goes well with many cheeses.
And I like hefeweizen with limburger. Of course the beer should never be too cold.

Hi

This is SLIGHTLY off topic, but I like Smoked Cheddar, Smoked or Summer Sausage on Triscuit crackers with Scotch. Preferably the really smokey Scotch. I haven't tried it with any dark beers YET.

St. Arnold is in Houston and is distributed regionally. The Lawn Mower is a German style Kolsch. I also like their amber ale.

My son us a U. of Washington graduate and he used to send us the cheese. We can mail order it during the cooler months.

Your son was a University of Washington or a Washington State grad? I can't picture a UW student sending Cougar Gold home ...

Makes more sense. I thought I saw someplace in Seattle that sold Cougar Gold.

Did he ever have any Beeche's Reserve Cheddar when he was in Seattle?

(by the way - which department?)

We did go to Beechers in Pike Place Market area and tried several of their cheeses. Our son and his wife liked their cheese and served it often. My wife and I actually started enjoying cougar gold when an aunt of mine sent us some many years ago and it was not like anything we had found in Texas, so some of it is sentimental.
