Lip smackin' good

Growing up italian, corned beef hash was something my brothers and I saw on TV but never experienced. Although I could never understand my fathers love of SPAM.
I tried corned beef hash a few years ago and loved it. The best morning food with eggs over easy and buttered toast. Now THATS livin' !

I've not seen the Hereford products at the stores I go to in Houston. Found one online store, but they say it takes up to 6 weeks to deliver.

Right! Mix it with veggies, don't just eat the stuff alone as I used to do :eek: , Cabbage is good, but… watch out! This stuff has loads of salt, not good for the arteries, choose your poison with caution. A little bit mixed with veggies is great [huh] Just a warning lol

Big fan o' the hash. We rarely eat it at home, but it is a staple on camping trips.

If you want it crusty, the trick is to cook it like you'd cook hash browns. Flatten it out across the bottom of your skillet like a giant patty, and let it cook. Then, flip it over in sections with a spatula. Don't keep "hashing" it and breaking it up with your cooking utensil - that's the enemy of the crispy crust we all know and love. A cast iron skillet helps.

Sidenote: I cook my corned beef in the crock pot with a pint of Guinness and some veggies. Then, let it cool, wrap in foil, and serve it the following day - either cold, or reheated on very low heat in the oven (200 or so) for a couple of hours.

for the record i LOVE Corned beef hash. My favorite breakfast joint makes great Corned beef hash and if I'm not eating Eggs Benedict you can bet I'm eating a Corned beef hash omelet with cheese.

My problem is that the crust sticks to the skillet. I think this is one instance where a cast iron skillet is more non-stick than "non-stick."

I love cast iron, but the previous owner of my house opted for form over function and put a glass-top range in. Cast iron will scratch the glass.

As for cooking corned beef briskets, I just shake some Tony's over it, wrap it in foil and bake it at 250F until it's falling apart.

Think I'll do a roast when I get in from offshore. I always do a huge one so I can make roast beef hash the next day.

Ralph's in California was carrying it. The big three supermarkets here are Ralph's, Vons, and Albertson's.
I checked last week and the local Ralph's dropped it from there line, but still carry the Hereford's Corned Beef. I will be sending them a request to restock.

Hereford's hash has larger chunks of beef, unlike the stuff you get in a restaurant, which is almost pure'ed. The last few cans seem to be a bit sweeter than usual, but that could just be me as I've stopped using sugar.

I'll check Albertsons.

I sent an e-mail to Hereford's and was told to look at Kmart. I don't think there are any in Houston, but there is one in Lake Charles, which I'll be passing through on my way home from offshore. There is an Albertsons in the same parking lot.

My girlfriend calls it dogfood as well. I'm pretty sure it would kill a dog though.:D

a minute or two, and voila: cornbeefcaviar! Just like college.lol

Well, the Albertsons did not have any, but the Kmart did. In fact, they had the hash, the corned beef, and the roast beef with potatoes, so I bought a bunch. For once, Kmart does not suck.;)

The Hereford hash is certainly different. The potatoes are firmer and the meat grainier. Even my girlfriend likes it, says it does not look so much like dog food. The taste is different from the Hormel and Armour CBH I usually get. A lot more of one particular seasoning that I can't put my finger on. I actually like the taste of the others better, but I figure I'll get used to the Hereford which has a much better texture.

I was able to get the appearance of a crust, but it did not hold together like the stuff I've had in diners. It's a start though, and not bad for a first try.

Proper Corned Beef is a cut of meat (brisket?) that is midly pickled or 'corned'. To cook it you have to boil it, changing the water halfway through as it is very salty.

I thought no other country in the world did it that way except New Zealanders until I saw the cook Rick Stein do it when he was in Ireland. I've not seen that cut here in England though.

Traditional accompaniments are boiled potatoes, carrots and onions all cooked with the meat and mustard sauce. Mmmmmmm. I feel hungry!

True, but he was asking about corned beef hash.

To VaderSS: Due to your post I just popped open a can for breakfast! I shall have to try the roast beef.

The canned stuff is ok when cooked crusty in an iron skillet but it needs ketchup. Also with a couple of over med eggs on top, or scrambled in with the cbh. Denny's had a special corned beef breakfast once when I was there, it was very good. But then I have weird tatses.
