Hubby & I have been enjoying his recently purchased Weber grill. (He started a Facebook page for our grilling adventures - Bar-Raiser BBQ.)
Tonight we made chicken two ways. Lily & I had bruschetta chicken (marinated chicken in garlic & basil vinaigrette, grilled and topped with mozzarella and diced heirloom tomato and basil chiffonade).
Hubby had Pollo Loco (chicken seasoned with Hardcore Carnivore's Meat Chelada seasoning, topped with a grilled Aneheim pepper and pepper jack cheese).

Hamburger steaks smothered in brown gravy, mashed potatoes...also smothered in brown gravy, and English peas...or just peas if you're in the U.K. I guess.

They had bell peppers on sale so I bought some of the orange ones and made stuffed peppers, vegetarian style. The filling was rice, mushrooms, onion, parsley, garlic, and spices. Baked in a pan with tomato sauce, served with basil pesto. It was very good, it is hard to come up with good tasting meals on a low salt low protein diet but these hit the spot.

Hubby wanted to re-create a childhood favorite, the Bean Burger from S.W. Tookie's in Seabrook, Texas. It traditionally had refried beans on top of a burger with crushed Fritos and Pace Picante to finish on top of it all.
Ours started with a Brioche bun, a grilled 1/3 pound burger topped with American cheese, jalapeno refried beans, crushed Fritos, and then a freshly roasted Hatch pepper on top.
He said it reminded him of the burger at Tookie's, but kicked up a notch or three.

I picked up a couple pounds of bbq pork and some slaw from a place in the neighborhood, heated up some tater tots to go with it when I got home, and watched my kids make it all disappear in about 15 minutes.

Aaah..I love good pork BBQ. The pork makes for best taste and the sauce is also key. For a brand BBQ sauce I like 'Sweet Baby Ray's' which actually has a nice simple somewhat spicey tang. Slaw is always good with BBQ'

Hybrid fajitas/tacos - tacos made with fajita seasoning. I used shaved beef for the meat. Hubby grilled an ear of sweet corn, Hatch chile, and sweet onion. I used that to make a relish by adding cilantro & lime juice. He also grilled the corn tortillas. Topped with crema agria, Colby cheese, and tomatoes. Lily ate 5 of them!
