I'm not going to undertake any massive reflanging efforts or anything, but I have one hat (a Borsalino Alessandria with 2 1/2 inch brim) that I really like and would like even better with less curl in the brim.

Yes, you can flange a hat with a bound edge. Give it a shot of steam on the brim and weight down the brim on the flange and let it dry.
