Next time you can use a leather detergent which will rehydrate the hide as well as cleaning it.

Okay, I see. This is just one post though, hard to draw real conclusions. But the new jackets all look rather light weight so he probably has a point.

Could be an interaction with the sweat (salt) and grease of the previous owner. Propably aniline dyed?
Conditioning the whole jacket should even it out a bit.
If it is aniline dyed you can used some diluted vinegar and clean the gooch areas with it, you can get it reasonably wet without damage...

In Germany we call it "Tiefziehhaken" and every serious hiking boot has it.

I would not "overcondition" as well, but the literature I read about tanning and leather in general actually had tear tests for different amounts of fat added to the same leather. Tear resistance went up with higher fat content, but gets more flabbery and sticky and at some point it is just too...

You can be pretty sure its calfskin or cowhide, non expensive real motorcycle jackets are never made out of horsehide and sheepskin/goat are not suitable. Every normal HG I own is made out of cowskin.
Not worth 250 Dollars in my opinion, I never paid...
