I do it on some of them, my Cal with mouton collar, I pop the back and leave the collar tips as normal, my G-1 I pop and it's nice, it's what the collar was designed to do.

Actually Perfecto style jackets can work very well this way on a motorcycle, they really can be zipped up tight with the collar up and keep the wind off your neck.
