The other hat looks like a straw of some sort, maybe milan, with the hatband removed.

Yeah, the first one is a Panama straw hat. Can't be sure of the weave but probably Cuenca. Fairly obvious that it's been subjected to a ribbon-ectomy and may even have the inner sweatband removed. I say that because it looks really formless (not bad in its own 'organic' sort of way) with the wavy brim and drooping break angle from the crown to the brim.

Second is yes, Navy dixie cup turned down.

Third is a knit cap.

Serpico was a great movie, no?
