I'd have to agree with you Jim. I've found smoking after the oven also gives a superficial, sort of acrid flavor to the meat. Not awful, just not as nice as smoking first.

I've done this for lobster salad and I can't see why it wouldn't work for chicken salad. Fair warning though, it will be a bit thin in the sauce, so I make the salad let sit, then serve on bread from a slotted spoon immediately before serving.
