Condition of older leather

I recently purchased a jacket on ebay. It's approximately 30 year old goatskin. I'm trying to figure out what shape the leather is in.

Visually, it looks very nice. Almost new, in fact. Tactile, it feels crisper/stiffer than other goat I have, and I don't know if that's the age, or just this particular hide.

Is there a way to tell?

I had a 1940s goat jacket a while back. It was a little stiff, but softened up with a little cold water spritz and a few times wearing it. It was never really "soft" though. I think goat is different than Horse/steer, and I'd stay away from heavily conditioning it.
