Pic was found in Bowdre’s pocket after he was killed & may have been taken on their wedding day. Buried with pards Tom O’Folliard (1858 - 1880) & Billy the Kid (1859 - 1881).

Lots of meat places in Texas back in the day made their ground beef from the meat scraps after they cut their steaks and roasts for the day... basically leftover parts.... nothing got wasted so it ended up as a good cheap lunch option. Chili and stew had spices and vegetables and cooking time... burgers were basically a grind and grill product

Around here a good cattleman’s steak house will still have the best burgoo, chili, & beef fajitas from steak trimmings. They usually offer them as a side dish so you can’t make a meal out of them & you still have to order a steak.

Lots of meat meat purveyors were Czech and German so lots of trimmings ended up in Kilbasa sausage. If anyone is ever driving down I35 north of Waco, stop in at West, Texas and Czech out the local delis ( sorry, couldnt resist) good places on both sides of the freeway so theres no excuse for not stopping... you WILL be glad you did
