At least for me. I am on a soft diet for about a week..

So since I am eating soup for 7 days, it got me thinking.


What's your favorite soup?


PS I admit this is idea gathering...I am running out of kinds of soup to not be bored with.....

I love salmon chowder, butter nut squash soup, cold borsht or mushroom soup, and most kinds of tomato soups.

Hot and sour or egg drop from the local chinese joint. Sharkfin was delicious the one time I had it.

I've been on a diet for a few weeks.... During the week, I eat nothing but apples, bananas, some rice, soup, and vitamin packs. (starvation rations :eek: ) Saturday is my day to practically eat anything I want, but my stomach has shrunk so much, I feel full very quickly. [huh] I have lost 12 pounds so far, and have 13 to go... :) (225 back down to 200)

Anyhow, me and Progresso soup have been great friends. ;) Lot's of variety, and pretty damn good soup. I like:

Chicken & Rotini
Lentil
Vegetable Italian
Chicken & Wild Rice
Garden Vegetable
Hearty Penne in Chicken Broth
Tuscan Style Meatball
Grilled Steak with Vegetables & Penne

Gotta look good for the QM in November! ;)

I did a veg soup last week and threw in a large cut up, sweet potato. It turned out really nice.The sweet potato compleatly broke down and just gave a really lovely flavour and colour to the soup.

Pho Bo (Hanoi Beef Noodle Soup) Recipe Courtesy of Gourmet Magazine
Show: Cooking Live
Episode: Soup for Supper

6 cups beef broth
1 (1/4-inch thick) slice ginger
2 whole star anise*
1 cinnamon stick
1/2 pound piece boneless beef sirloin, trimmed of any fat
3 ounces dried flat rice noodles*
1/4 cup Asian fish sauce*
1/8 teaspoon freshly ground black pepper
1 cup fresh bean sprouts, rinsed and drained
1/8 cup minced scallions
1/4 cup fresh cilantro sprigs, washed and finely chopped
1 small thin fresh red or green Asian chilie, sliced very thin
1/2 cup fresh basil leaves
Lime wedges for garnish
*Available at Asian Markets

In a 2 quart saucepan bring broth, ginger, star anise, and cinnamon to a boil. Reduce heat and simmer for 15 minutes.
With a very sharp knife cut sirloin across the grain into very thin slices.
In a large bowl soak noodles in hot water to cover 15 minutes, or until softened and pliable.
While noodles are soaking, bring a kettle of salted water to a boil for noodles. Drain noodles in a colander and cook in boiling water, stirring 45 seconds, or until tender. Drain noodles in a colander. Set aside.
Strain broth into saucepan and bring to a boil. Stir in fish sauce, salt and pepper. Add sirloin and sprouts and cook 30 to 45 seconds, or until sirloin changes color. Skim any froth from soup.
To serve, divide noodles into 4 bowls. Ladle soup over noodles. Sprinkle scallion greens, cilantro, chilies and basil over soup and serve with lime wedges

Thank you all for some great sounding ideas....

The Pho looks good...but a bit too 'requires chewing' for the current state of things in my mouth.

I shall have to try some of the more mushy creamy ones...Cream of spinich sounds really darned good

mmmmm soup...
