In celebration of Mardi Gras...last night, I made red beans and rice. My recipe is an adaptation of the one used at Coop's Place, a local's bar on Frenchmen's Street. Coop's uses rabbit. I use pork loin. Served with grilled smoked sausage on the side. Garnished with chopped spring onion. AF

We have a gluten-free pizza in the oven (been doing mostly gluten-free since I got out of the hospital last thanksgiving with a rupture disc in my low back and debilitating swelling / spasms).
