Depends on the suit, but seeing as I rarely go more formal than the black 2-piece, it'd be safe to say one-point. Easy to fold and surprisingly rare, actually. Plus that unlike with a two-point, nobody's going to think I'd be using a prefolded one.

When going white tie as well as more formal occasions, say, funerals, I use the flat.

Useful website - I must give that a go. I would veer to a more formal fold on formal occasions, otherwise for me it's the old 'stuff it in til it looks right' approach. I am especially fond of an informal fold with the burgundy square I wear ni my ivory sb shawl dj for black tie in Summer months: an anarchic splash of colour in the centre of the monochrome. I also find that what looks best can depend upon the size, thickness and texture of the pocket sqaure itself: I have some that only work with a more formal fold, while others look great just stuffed in. Further, the sort of smaller pocket square that seems to be in vogue for eddings nowadays seems to stay in place better puffed (points tucked in) than anything else.

At work I go for a flat fold, elegant and not to show. On the weekend I prefer one or three point fold, depending on what I feel like.

Thanks for the great website there are folds I'd never heard of and must try.

One question about pocket squares.

I picked up a few inexpensive ones recently which are made of coloured silk.
I found some directions on how to fold them here, but the fabric is so thin and soft that I tend to mess everything up when I finally tuck it in my suit pocket.

Are pocket squares like that suitable for folding or do you just stuff them in your pocket and fiddle around until it looks good?

I certainly wouldn't worry about it, the final touches/human touch/fiddling with it tends to be the action which truly brings out a pocket squares character ;)
