Last night was a pork roast with cornbread stuffing, and roasted carrots and potatoes.

My vegetarian friend is staying this week so we accommodated her;
grilled Portobello mushrooms with a garlic butter glaze
grated cauliflower, red pepper, onion pilaf
roasted yams, and various squashes tossed with olive oil and rosemary.
I miss my meat but this was pretty tasty.

Last night I made Thai chicken meatloaf. Lily didn't hate it (she picked at it), and Hubby's having leftovers for lunch (so he didn't hate it). It'll go in rotation for in a couple months.

Hubby's lunch today. He added extra sambal to the meatloaf. Leftovers don't have to suck!

Made homemade spaghetti sauce today (half hamburger, half Italian sausage). Triple batch going into the freezer for future meals, but we ate some tonight. It was so good!

(Green salad on the side.)

Wife and daughter are doing the 30 days of whole foods, so tonight it was pork shoulder cooked for hours in the crockpot, with bell peppers, cauliflower rice, and cabbage. Delicious~
