Ok Babydoll! I got up this morning and got the pit fired up! Threw a brisket, and a boston butt on about 8:30. When can I expect you , the hubbie , and the girl child over for tonight's eats??? ;)

Prolly wrap that butt roast in aluminum foil about 2 hours and throw it back on the grate. The brisket is a big one. So in about 3 hours I'll wrap it and throw it back on for a couple More hours. Sausage is for snack in' while I cook.

Usually I prefer local post oak for this job. But I haven't had a chance to go get any. I have a lot of mesquite cut. Really don't care to use it as a smoking wood. But I started with some small pieces. About every hour or so I have one of them little charcoal chimney things I start some lump and briquette charcoal in. Then I dump it in when it's good and going. Slow and low heat for I suppose 6 hours or so or longer. I doubt I get this pit above 150 F. Don't have a thermometer. So I'm guessing. May get hotter for a little while when I put in the fresh charcoal.

With my credit card rewards, I have the chance to buy an electric smoker.
A coworker has one and said it's close to the charcoal way, without all the hassle of keeping the temps up.
I'll take his word for it, because he's an expert on BBQ competitions, and spending an entire weekend cooking.
I couldn't do that, especially with a grill mounted to a trailer. :eeek:
Unfortunately the rewards site doesn't have a green egg. I'll have to find one of those at an Estate sale, because I'm not paying $1,000 dollars for one.

You have a nice set up there. My grandfather used to have a brick one inside a sitting area. It was great and the smoke went out a real chimney---if you wanted to vent it that way. :p The philistines who bought the old place tore that all down and yanked out the thirty fruit trees he had on the land too. :doh: :mad: I know because the dumbasses live just around the corner from me……
I use a glow ring to light up my new add charcoal---much easier and no fuss. If I were in the woods, without electricity, then I would use the chimney thing. :p
I would wrap it in bacon and then aluminum foil. :D

Ihad a chance to get one of those Egg things for free . I just didn’t respond to the Craigslist ad fast enough. :doh: I also missed out on one of those big rolling smokers that look like two 55 gallon drums put together….:doh:

Had a few friends over for a Low Country Boil. Potatoes, onions, chicken, sausage, sweet corn on the cobb, fresh shrimp and lots of Old Bay all boiled together and poured out directly onto the table. Grab a plate and a cold beverage and pick out what you want to eat.
