Tonight was a plate full of fettuccine tossed with olive oil, sauteed spinach, fresh garlic, kalamata olives, and marinated artichoke hearts, with a seated tuna steak sitting atop the whole mess. There wasn't any banana pudding to round it out, sadly, but I did make do with a couple of ice cold Millers.

Oh, I think that it was already at 100. 100+ is what I would call it. Actually, I feel it was at 100 without dessert. There would be no immediate room for dessert as I would eat until there was no main course left.

Lady ToE was busy last night so I decided upon a couple of turkey and salami with Swiss cheese sandwiches last night. I could eat sandwiches everyday and be very happy about that.

Lady ToE surprised me and brought home food from are favorite Chinese food restaurant. Broccoli and beef, pork fried rice, and sesame chicken.

For the occasion of my littlest child's 5th birthday last night, her grandmother slow cooked some chicken breasts in bbq sauce in the crockpot, then shredded and served them on buns. There were plenty of doritos to accompany the sandwiches and a pink, strawberry flavored cake and vanilla ice cream for dessert.

I certainly enjoyed It!That is such a great way to cook chicken. It is so tender and steeped in flavor.
Had chicken again last night. This time it was roasted, with some roasted vegetables (Brussels sprouts, sweet potatoes, green beans, carrots, and onions) and tomato rice alongside it, and garlic bread.

Teriyaki chicken and rice at a local sushi restaurant. Close to okay, but not quite. We knew going in that it was considered to be expensive (it was), but we figured/hoped it would be worthwhile (it wasn’t). We won’t be going back.

My version of pozole. Pork, spices, broth, onion, tomato, jalapeno, cilantro, corn. Served with tortilla chips and guacamole on the side. Omg! Leftovers for days. So excited.

Had an emergency call to work yesterday and didn't get home til kind of late, so needed something quick to serve the troops. I crumbled up a pound of Jimmy Dean sausage in a skillet and when it was browned I dumped in two cans of pinto beans and hit it all with a potato masher. Threw shredded cheddar all over it while it was warm and busted open a sack of tortilla chips and let everyone have at it.

Today was the first day cool enough to need a jacket heading out to work, so I marked the occasion with homemade vegetable soup and grilled cheese sandwiches this evening.
