I would look at a Thedi instead if it is 'the one.' Something like this - https://thedi-leathers.com/product/cafe-racer-mtc-127920/ could work really nice in Saskatchewan with the removable wool lining and mouton collar. Also depends on your build though, Thedi's do tend to fit more trim
FWIW this is my experience as well. If you absolutely 100% need it by a certain time and that is your main priority I'd look elsewhere. That said, if you are relaxed with your timeframe, Thedi is well worth it.
