Last night was chicken soft tacos with all the fixins, and Spanish rice. I slow-cooked the chicken all day with tomatoes, lime juice, and garlic. Delicious!

Saturday evening we grilled NY strips & salmon, with baked potatoes, caesar salad, and a Merlot reserve we'd bought back in February. Friday was our 11th wedding anniversary, so that was kind of our celebratory dinner.

Sunday night was baked chicken cutlets, cheese tortellini in tomato cream sauce, and garlic butter rolls.

Tonight - unsure!

^ Apple tart sounds delicious!

Rue, I think we can swap nights at each other's houses for dinner. Your menus always sound fantastic!

Last night we ended up having General Tso chicken with steamed jasmine rice and veggies.

Tonight was a whole chicken prepared by 14 year old Hood for his cooking class, with broccoli, and baked potatoes. He's on tap to make his apple tart for Thanksgiving dinner.

Wow! I'm impressed!

Sounds great to me! Wish we lived close enough to do that :)
