Last night I made veggie stir fry with chicken and a bit of chow mein noodles (the soft soba kind). I used broccoli, onion, carrots, crimini mushrooms, baby bok choy, scallions, and kale.
I have a confession to make. I snuck the kale in with the veggies. I cut it up small so it would blend in with the leaves of the bok choy. And I didn't tell hubby he was eating (the dreaded) kale until he'd doused his bowl with sambal and eaten half of it. He gave me a loooong, hard look when I told him, poked around in his food to see how much there was, realized it was ALL OVER, and decided that wasn't a battle he was willing to fight. Lily, on the other hand, picked all of the kale out of hers and ate it first. Then the mushrooms, and then the chicken. Had to fuss at her to eat bok choy, broccoli, and carrot. But she ate it.

+1 to the ginger, plenty of it. I also throw sriracha, brown sugar or/and honey, and lime juice in with the soy sauce. Or pineapple juice, but it's sweet enough without any honey or sugar. There's never any leftovers.
Also sometimes we put in broccoli instead of cabbage.
Now I'm hungry.
