Hubby went grocery shopping with me today. He insisted on nachos for dinner tonight.

Grilled Mahi Mahi with Cajun seasoning, seven grain rice and peas with a salad. And PBR, of course.

A couple of bacon, lettuce, and tomato sandwiches, plus some seasoned fries with a sude of barbecue sauce for dipping.

Fried chicken from the grocery store deli, a salad with Asian ginger dressing, and King's Hawaiian rolls.

She makes a big pot roast...and there is only two of us eating it. Plus I am trying to get back in summer shape to fit in my 32" cutoffs by June. I can almost get them buttoned....if a **** it in....

Easter Dinner

Just finished step one for Sunday's porkchops - dry-rub.
Tomorrow I will slow cook them, confit-style (submerged in lard, cooked at 180F for five hours).
Then they will sit in the fridge "mellowing" until I warm them and do a quick sear on Sunday.

Best way yet for cooking thick-cut pork chops without drying them out.

Actually...we usually have a rainy spring with consistent warm weather arriving in mid May(70-75). Hot weather(85-95+) arriving in July lasting until late October.
