Jambalaya, but I forgot a key ingredient: shrimp. I meant to get it when I went out today, but I forgot to.

I enjoy it moreso without the shrimp.

Agreed. I like shrimp in gumbo, but prefer chicken and sausage in my jambalaya.

How can anyone not "like" a meal that has tacos ( or in your case "taco") as its main/only course?

I almost had that again tonight but I needed to use up the tomato I bought a few days ago. So I had a sandwhich with tomato and fake bacon on Italian bread. I think tomorrow night will be taco night again.

The second one might wind up in a taco shell. I see a trend here lately: tacos or BLTs. Total summer food. I've been making a lot of egg salad, too.
