after 10months of using button up jacket, I now develop a skill of buttoning or unbuttoning the jacket with left hand, while driving on motorcycle, without looking.

in short give it a time, button up jacket has its advantage over zip up jacket.
I would never trust a button jacket to hold together on a motorcycle in the event of a face - down slide.

^^^^You don't have to go to all that customising lengths, unless of course you like your coat so much that you're prepared for all the hassle. You can get a leather coat with both button and zipper fastening, and with removable collar and lining, without breaking the bank.

Sure you can design a jacket to have buttons on the storm flap. That's quite a different thing from retrofitting a zipper on a jacket with buttons that wasn't designed to take the zipper.

it all depend on the situation, in my case it would be just fine, the speed I'm driving is more likely bicycle leisure speed, google image up southeast asia traffic you'll understand it better.

Get used to the buttons or sell it and buy another jacket...
